This spring, Cafe presents a number of refreshing seafood delights, allowing diners to enjoy a feast without worrying about getting out of shape before the approaching summer.  From March to May, a selection of hearty dishes made from fresh seafood, tangy fruits and herbs is available for diner’s indulgence.  

Explore the world with Cafe by taking your taste buds on a tour of gourmet cuisine.  Inspired by ceviche from Peru in South America, our chef takes the juices squeezed from sour fruits to marinate the seafood.  The juices are acidic enough to not only effectively “cook” the seafood, but also enhance the texture and flavour of the meat.  This menu features seafood ceviche with citrus fruits and corn tortilla, salmon ceviche with orange, lemon and fennel salad and Asian style tuna ceviche with lime, sweet potato, bell pepper, cilantro and ginger.  To tempt the appetite, try the cuttlefish ceviche with lemon, chilli and fresh herbs and the spicy shrimp ceviche with grapefruit, celery, tomato, avocado and cilantro, which will gratify diners who are seeking zesty flavours. 

This tour continues with a few flavoursome dishes that no diners can resist.  Savour the stuffed squid with chorizo, with the meat filling packed into grilled crispy squid.  Diners will be surprised by the complexity it brings to the palate.  Meat lovers must try the herbed grilled chicken and the roast beef with cilantro sauce prepared from tandoor; two tender and mouth-watering dishes.  

The above highlights will be served on a rotational basis during dinner buffet.  In addition, Cafe will serve up an impressive range of freshly made delicacies prepared at live cooking stations, including the tantalising live lobsters, enticing grilled seafood and tempting teppanyaki.  Other offerings include sushi, sashimi and tempura from the Japanese kitchen; a fine selection of fresh pastas and pizzas from the Western kitchen; authentic curries and fresh naan breads from the Indian kitchen; as well as an array of Western antipasti, salads, cold cuts, seafood on ice and homemade desserts during the dinner buffet.
